By the way, gelatin is very useful for our body, because it is rich in nutrients and amino acids, contains proteins and dietary fiber. You can use any fruit juice (store-bought or homemade), but if you want to end up with sweeter candies, add sugar while heating the juice.

How to make jelly candies at home?

For making your own jellies, you can use those products that you already have in the refrigerator. Surely every home has frozen fruits and berries or jam. Cooking process

Homemade jelly candies are a simple but incredibly delicious dessert that will delight any gourmand.

Prepared on the basis of aromatic and tasty berry puree, the candies instantly attract everyone's attention with their bright and colorful appearance alone. And once you try them, you will be completely captivated - the candies are aromatic, sweet, with a rich natural berry aroma and taste that you want to enjoy again and again

Try it!

To make jelly sweets at home, prepare the ingredients according to the list.

Prepare a container for cooling the jelly mass - line it with baking paper, grease with oil and sprinkle with coconut flakes.

Sprinkle frozen berries with sugar and defrost. I had a mixture of strawberries (200 g), raspberries (200 g) and black currants (1 handful), but one type of berry is enough.

In order to speed up the process, you can defrost the berries in the microwave or place the container with the berries in a water bath.

Grind the resulting mixture of berries, juice and sugar to a puree.

Pour the resulting fruit puree into a saucepan. Add lemon juice and instant gelatin.

Heat the mixture over low heat for several minutes, stirring constantly, until the gelatin and sugar dissolve. If necessary, you can bring the mixture almost to a boil and immediately turn off the heat.

When the gelatin has dissolved, turn off the heat and cool the mixture to a temperature of 36-37 degrees. To make sure the mixture has cooled sufficiently, place a drop of the fruit mixture on your hand. If it is not felt on the skin, the temperature is correct.

Beat the mixture with a mixer for 8-10 minutes until it lightens and doubles in volume.

Pour the mixture into the prepared container and place in the refrigerator for 3-4 hours for final cooling.

Once the mixture has cooled and completely set, remove it from the mold.

Pour boiling water over the knife blade, blot it with a napkin and cut the jelly mass into pieces of the desired size. If desired, roll the resulting candies in powdered sugar. Store candy in the refrigerator in an airtight container.

Jelly candies are ready! Bon appetit!

The candies prepared according to this recipe are elastic, but quite delicate in taste. Their texture is reminiscent of bird's milk candies, only a little denser. If you want a more “rubbery” result, like, for example, gummy bears, you can slightly increase the amount of gelatin and skip the whisking step.

  5. Gelatin is poured with water and allowed to steep; as soon as the mass swells, add it to the hot fruit.
  6. Stir everything and turn off the stove.

From fresh berry juice

This is the healthiest product because it contains only natural ingredients. For the winter, many housewives freeze fresh strawberries, cherries, sea buckthorn, and currants, from which they can make jelly candies of excellent taste and quality.

You need to take:

  • 1 glass of prepared berry juice;
  • 30 gr. gelatin;
  • 6 tbsp. l. Sahara;
  • 2 tbsp. l. lemon juice.

Pre-soak the gelatin in half a glass of juice for 30 minutes. Pour the remaining juice into a saucepan, add citric acid and sugar, put on fire and bring to a boil. Stirring constantly, heat the juice until the sugar is completely dissolved and add to it the part of the juice in which the gelatin was dissolved. Stirring, bring to a boil, but do not let the syrup boil. Pour into prepared molds. Place in the refrigerator for several hours.

Instead of juice, you can take a pre-cooked compote of fresh berries or fruits. The cooking method and proportions will be the same.

It is better to take silicone molds, because... They make it easier to remove the jelly candies.

There are several recipes for making jelly sweets from berries. You can use only one type of berry or use a combination.

For this method of making sweets you will need:

  • fresh or frozen raspberries – 200 g;
  • water – 20 ml;
  • gelatin – 10 g;
  • granulated sugar – 50 g.

Cooking instructions are as follows:

  • First you need to dilute the gelatin in a small volume of water and wait until the powder swells well.
  • Then sort, rinse and crush, or grind the berries through a sieve.
  • All prepared ingredients are placed in a small saucepan, placed on the stove and brought to a hot state, but not brought to a boil, constantly stirring the berry mixture.
  • After the granulated sugar and gelatin have dissolved, strain the berry mixture through a sieve again.

All that remains is to pour the sweet mass into molds and put it in the refrigerator for a while so that the gelatin hardens. After a while, take out the candies and sprinkle them with powdered sugar.

Tricks for making gelatin candies

To enjoy the incredible taste of homemade gelatin candies, you need to know the basic principles of making a sweet treat. So, how to make jelly candies at home?

  • Gelatin. To swell and form jelly, it should be placed in a deep container filled with cold water. The gelatin mixture should sit for 15-20 minutes to obtain the desired consistency and texture.
  • How to prepare sugar syrup for jellies? Pour ¾ cup water into a saucepan. Place the container on the stove and bring to a boil. Then add granulated sugar to the water. Stir the solution until the sugar is completely dissolved. Simmer the sugar syrup over low heat for another 5 minutes, remove from heat.

After adding the ingredients specified in a specific recipe to the gelatin mixture, you need to pour the delicacy into molds. Then the dessert needs to be cooled to room temperature (let it stand indoors) and put in the refrigerator to harden for a couple of hours. It is not forbidden to give homemade jelly candies the desired color and smell by using food coloring and flavorings

But here it is important not to overdo it. And, of course, remember about naturalness and usefulness. At home, you can use both portion molds and baking dishes to harden gelatin candies.

It’s just that in the second case you will have to cut the gelatin layer into squares, rectangles or triangles, which will require additional time and effort on your part. The mold must first be greased with vegetable oil so that future candies do not stick to its bottom and it would be easier to remove them in finished form. Another option is to line the bottom of a baking dish with foil, which you then moisten with a special cooking spray. Ready-made candies should be rolled in powdered sugar, sesame seeds or coconut flakes - to your taste or depending on the instructions of a specific culinary recipe.

  • Gelatin candies should be stored in a hermetically sealed glass or plastic container, preferably in the refrigerator, but can also be stored outside at room temperature.
  • When cooking sugar syrup, do not leave the sweet solution unattended and do not forget to stir it often to avoid accidents (if there are children in the house) and burning of the treat.

Recipe 1: fruit jelly from juice (step-by-step photos)

  • Gelatin - 1 tbsp.
  • Water - 1 tbsp. (200 ml)
  • Juice - 400 ml (it is better to take two types of juice, 200 ml each)
  • Sugar - to taste
  • Fruits - optional

The most reliable way to make good gelatin jelly is to read the instructions on the gelatin package. After all, the gelling properties of gelatin differ depending on the manufacturer and the type of gelatin. For example, gelatin in plates has a lower gelling ability than powdered gelatin, and the methods for preparing the gelatin mass are radically different.

This recipe suggests approximate standards, based on the instructions for the specific gelatin powder.

1 tbsp. pour gelatin with one glass of cold water and leave for about an hour to swell.

Next, prepare the juices, on the basis of which the jelly will be prepared. Juices can be either packaged or prepared at home. There is no clear framework for combining types of juices; it all depends on your preferences. The only thing is that juices that are contrasting in color will look more impressive. But if you want to make one type of jelly, this issue should not worry you.

Pour juice (in this case pineapple) into a saucepan and add half of the gelatin mass. Taste, if the juice is sour, add sugar to taste. Heat the juice until the gelatin and sugar dissolve. Next, pour the juice into containers and place in the refrigerator until completely solidified. You can add pieces or slices of pineapple to the pineapple layer. It is advisable to pour the jelly into transparent cups or bowls.

You need to do the same with the next layer, pour cherry juice into the pan, add the remaining gelatin mass and heat until the gelatin dissolves. Carefully pour the cherry juice onto the well-frozen pineapple layer. You can decorate the top with berries or fruits.

It is ideal to decorate with those berries and fruits whose juices were used in the preparation of gelatin jelly. For example, you should put pineapple pieces in the pineapple layer, and cherries in the cherry layer. This will not only decorate the dessert, but also determine the type of jelly.

How to make homemade chocolates

  1. Break the chocolate into pieces and melt it in a convenient way (see point 2 of the rules for preparing sweets). Melt it just until soft. Be careful not to overheat it.

    If you decide to melt chocolate in a water bath, then I described in detail how to do it here.

  2. Take a clean and dry silicone mold specifically designed for candy. Using a silicone brush, coat the sides and bottom of each candy compartment with a generous layer of chocolate.

  3. Place the mold in the freezer to let the chocolate harden.

  4. Meanwhile, dilute the gelatin with warm boiled water. Stir and leave until all the crystals swell.

    Tip: I recommend reading the instructions on the package for its use.

  5. Boil the milk and leave to cool to room temperature. Next, pour in cognac, diluted gelatin and mix.

    If the dessert is being prepared for children, then exclude alcohol from the list of products.

  6. Pour the milk-cognac liquid evenly into the molds with frozen chocolate and put it in the refrigerator to cool. You can stop at this stage or continue further: cover the frozen jelly with a layer of chocolate on top to seal it inside. Do this at your own discretion.

  7. When the chocolates have completely hardened and cooled, they can be removed from the molds and served on the dessert table.

That's all, isn't it, these chocolate candies are easy to make at home! And most importantly, they are very tasty and healthy! Enjoy!

  • Then gelatin, previously swollen in a small amount of water, is added to the jam simmering on the stove and mixed thoroughly.
  • Marmalade, or more precisely, its predecessor, is considered ready when the mixture, taken from the pan with a spoon, does not flow back from it. Another way to determine the readiness of a homemade delicacy is to drop jam onto a horizontal surface. The lack of spreadability and the ability to maintain shape indicate that it is time to remove the fruit and berry mixture from the heat.

If you love marmalade, but are afraid it will make you gain weight, replace granulated sugar with fructose, stevia or any other sweetener. This measure will reduce the glycemic index of the sweet product to completely safe limits.

Take only high-quality gelatin, do not skimp. Otherwise, your culinary masterpiece will be spoiled by an unpleasant specific smell. Don't add more gelatin than the recipe calls for, otherwise you'll end up with a rubbery treat. However, such marmalade has a right to exist: for example, in the States it is called chewable and is very loved by both children and adults.

Before soaking gelatin, be sure to rinse dishes equipped for this with water. To swell, this food additive must be poured with liquid at room temperature, and not vice versa - pour it into water. This way, there will be no lumps in the resulting jelly.

At home, the issue of preparing molds for future sweets is more difficult, so we pour the finished jelly into a baking dish. You need to line the bottom of the mold with foil to make the finished jelly easier to remove. It is important that the thickness of the jelly layer does not exceed 3-4 cm. Let the jelly cool until the mass has completely hardened. Take the resulting marmalade out of the mold and cut into neat pieces. If desired, cut pieces of marmalade can be rolled in coconut flakes or dipped in hot chocolate, making the jellies even tastier.

Multilayer jelly candies are made in the same way, only an order of magnitude longer. It will take time to prepare the syrup with each new component, after which each new layer is poured into the prepared form in turn. We give the finished layer time to harden, after which we fill in the next layer, and so on in order, layer by layer.

Ready-made sweets are served on a platter or in a candy bowl.
