Ingredients:
- 3 cups sugar.
- 0.250 ml filtered water.
- 20 g gelatin.
- 1 teaspoon citric acid.
- A teaspoon of baking soda.
- 1 cup powdered sugar.
- 1 packet of vanilla.
Cooking process:
- To begin with, the gelatin should be soaked. Gelatin should be powdered so that it swells faster in water. Stir it in 150 ml of cold purified water and leave for about one hour until it swells.
- Then heat 100 ml of purified water in a saucepan and add sugar. Mix well and bring to a boil. Cook the sugar until you have a very thick syrup. Afterwards, pour the prepared, hot syrup into the gelatin and, using a mixer or blender, beat the contents until light in color.
- Then add citric acid, vanillin and soda and beat for another five minutes. Then, using a culinary syringe and a special shaped nozzle, take the mixture and squeeze it in small portions onto a baking sheet moistened with water. After the marshmallow has dried, combine it with the other half and roll in powdered sugar.
Marshmallows with applesauce
Ingredients:
- 200 grams of applesauce.
- 300 grams of sugar.
- 1 white (egg)
- 100 ml water.
- 4 g. agar-agar.
Cooking process:
To make a good puree from apples, you need to wash them and cut out the seed heart inside. Afterwards, bake the apples in the oven or microwave, then let cool and remove the peel. Then grate the apples until they become a fine puree. Then add sugar to it and mix everything thoroughly again.
Beat the egg white with a mixer and add it to our puree. Mix everything well. Pour water into a saucepan and add agar-agar. Bring to a boil and add sugar while mixing the future syrup well. Cook the syrup over low heat so that the syrup does not burn.

- 100 grams of powdered sugar.
Cooking process:
- In order for the gelatin to swell well, it must be filled with cold water and left for about one hour. Then pour some water into the pan, mix it with sugar and bring to a boil. Mix our composition until the syrup is ready. Then pour our swollen gelatin into it, boil for one minute and remove from heat. Mix well with a mixer for ten minutes.
- Add lemon, soda, vanilla and stir for about five more minutes. Wet the baking sheet with water and, using a spoon (if you don’t have a pastry syringe), spread the mixture onto the baking sheet. The serving size will depend only on you, what you want your finished marshmallows to look like. The oven temperature should be no more than 120 degrees.
- Leave the marshmallows to dry in it for 30-40 minutes. When the marshmallows are ready, form whole marshmallows from the halves or serve in halves, whichever is more convenient for you. Dust marshmallows with powdered sugar.
Recipe for apple marshmallows with gelatin without sugar and eggs at home
You only need three ingredients to make this delicious diet dessert. This option is prepared without eggs and sugar, so it is very healthy and low in calories.
It is prepared very quickly and easily, with an apple-cinnamon taste and aroma, porous and tender. But if you suddenly don’t like cinnamon, you don’t have to add it.
Product Set
- Applesauce – 380 g
- Cinnamon - 1 tbsp. (taste)
- Instant gelatin - 15 g
Place the puree in a saucepan and mix thoroughly with cinnamon and gelatin powder.
Place over medium heat and heat, stirring constantly, but do not bring to a boil so that the gelatin is completely dissolved.
Then we put the mixture in a cold bath. To do this, lower the saucepan into cold water with ice and begin to beat with a mixer at high speed, holding the saucepan with your hand. The mass should turn slightly white, increase in volume and thicken.
Place it in a mold, cover with cling film and put it in the refrigerator.

Marshmallows with added banana puree
Ingredients:
- 450 grams of sugar.
- 5 grams agar-agar.
- 250 grams baby puree (banana)
- 1 egg white.
Cooking process:
To begin with, you should boil the puree so that the water comes out of it and the puree thickens more. If you don't want to use baby puree, you can take one banana and beat its pulp well using a blender. When the puree is ready, add a little powdered sugar to it.
Then mix agar-agar in a ladle with water and let it brew for about 10 minutes.
Then place the saucepan on the fire and bring to a boil.
Add sugar and cook for about eight minutes.
Add half the egg white to the banana puree and beat the mixture well with a mixer. Then add the second half and continue beating until the mixture turns white and becomes more fluffy.
Then very slowly, in a thin stream, pour in water with agar-agar. We begin to beat the mixture with a mixer at high speed until the mixture thickens as seen in the photo. Be sure to beat the mass exactly to this state, otherwise, when forming marshmallows, the mass will simply spread.
We take the finished mass into a culinary syringe and place the mass on a baking sheet covered with parchment. If desired, you can add food coloring to the marshmallows.
