What and how can you brew coffee if you don’t have a Turk?


Invigorating aromatic coffee is traditionally brewed in a Turk or in machines of varying complexity and performance. But if you don’t have special utensils or equipment at hand, this is not a reason to give up your favorite drink - there are several simple ways to brew coffee without a Turk at home. The utensils found in any kitchen are quite suitable for this. If simple rules are followed, the drink is almost as rich, taste and aroma as its counterpart prepared in the traditional way.

How to properly brew coffee without a Turk?

To make your coffee drink as thick and aromatic as Turkish coffee, you should follow simple rules :

  1. Choose the correct grind level . Fine and ultra-fine grinding is only suitable for Turkish grinding. When using other cooking methods, preference should be given to medium grinding.
  2. Use bottled or filtered water . A coffee drink prepared with hard tap water will be tasteless and unflavoured.
  3. Do not boil or brew with boiling water . Coffee does not tolerate high temperatures - when it boils, it loses not only its taste, but also its benefits. The optimal water temperature is 91-96°C, which corresponds to the temperature of boiling water that has cooled for 1-2 minutes.
  4. Choose the narrowest pan, cup or ladle . To prevent it from losing its aroma during the preparation process, the area of ​​contact between coffee and air should be minimal.
  5. Remove extraneous odors from dishes . Before brewing, you need to boil water in a container or pour boiling water over the container. Preference should be given to enamel cookware - enamel practically does not accumulate odors from previously prepared food.
  6. Use dishes with thick walls and bottom . Thick-walled containers retain heat longer and brew better.

The best coffee for making a drink is freshly ground .
If it is not possible to purchase whole grains and grind them before brewing, you can buy ground in packs. Preference should be given to grains packed in vacuum briquettes - in such packaging the product is protected from exposure to oxygen and sunlight, and can be stored without loss of quality for up to 18 months. After opening the package, the ground powder should be stored in a tightly sealed glass jar .

Important! It is also necessary to monitor the shelf life of the product - over time, coffee “fizzles out”, old raw materials turn out to be sour and not at all aromatic.

How to make coffee without a Turk and a coffee maker at home?

In a cup

Brewing in a bowl is one of the simplest cooking methods that does not require the use of specialized equipment .

How to cook:

  1. Pour boiling water over the ceramic bowl and wipe dry.
  2. Add 2 teaspoons of crushed product.
  3. Pour 200 ml of hot water over the raw material and cover the cup with a saucer. You can brew it together with sugar - this way the grounds will settle to the bottom faster.
  4. After 4-5 minutes the drink is ready to drink.

In order for foam to form on the surface of the drink, the contents of the cup must not be stirred during brewing .
This method of brewing is inconvenient because the coffee grounds remain at the bottom of the bowl, and the drink cannot be mixed, for example, with milk or liqueur . To avoid this, you can use a special paper filter in the form of a funnel.

It is placed in a cup, poured into a coffee filter and filled with hot water. After brewing, the funnel is removed along with the grounds, and a clean drink without sediment remains in the bowl.

By the way! If there is no filter, the coffee brewed in a cup can be strained through a strainer.

Cook on the stove in another container

An enamel container is suitable for cooking: a saucepan, a ladle, a stewpan. The enamel coating will prevent the loss of aroma. You cannot take aluminum cookware. Light metal will “kill” the taste and smell when heated; only copper utensils retain the properties of the coffee drink.

You need to prepare the pan:


  • Rinse with baking soda and rinse thoroughly. If there is no soda, rinse with hot water, then cold. Such actions will remove the smell of the pan. Do not use simple dishwashing detergents; their presence is difficult to get rid of. Traces of detergents spoil the taste of tea and coffee, so it is not recommended to wash teapots and coffee pots with soap and similar products, only with baking soda and water.

  • Heat the pan by boiling a small amount of water in it.
  • Pour out hot water and wipe dry with a clean towel. The container is ready.

For the drink, take coarse or medium grind coffee, 2 teaspoons per serving.

Pour the required amount into the pan, add water at the rate of 150–170 ml per serving. By pouring the powder with cold, unboiled water, we get a drink of enhanced strength. More caffeine will be transferred into the water due to the duration of heating.

By pouring ground coffee with already heated water, but not boiling, we will achieve soft strength and a strong aroma.

Place on the stove, turn on low heat. Don't try to speed up the process; getting the perfect drink takes time. Heat carefully, do not disturb, maintain the integrity of the foam. As soon as the foam begins to rise, remove from heat and let stand for 1.5–2 minutes. Put it back on the fire and continue heating until the foam rises. Repeat the warm-up cycle 3 times, this will be enough.

Turn off the heat, cover the pan with a lid and let the drink brew for 3–7 minutes, the holding time depends on the volume of water. The drink is carefully poured into heated cups without shaking the grounds; you can use a fine strainer to remove the coffee grounds. Served black, sugar, cream, milk are served separately, preferences and tastes vary.

In a saucepan

When you need to treat several people at once, you can brew coffee in a saucepan.

How to cook:

  1. Pour the required amount of product into the pan at the rate of 2 tsp. for 200 ml of water. Add sugar if desired.
  2. Pour cold water into the pan.
  3. Place the container on low heat.
  4. As soon as a thick foam forms on the surface of the drink, remove the container from the stove.
  5. Let the drink brew under the lid for 3-5 minutes, then you can pour the treat into cups.

To make your drink more aromatic and thick, you can use the double heating method .
As soon as a thick foam forms on the surface of the drink, the pan should be quickly removed from the heat. When the foam has settled, the container is returned to the stove and reheated until a new layer of foam forms .

Attention! If you need to prepare a drink quickly, the raw materials can be filled with pre-boiled hot water.

How to brew ground coffee on the stove

A convenient alternative to a Turk is a small ladle or stewpan. Choose an enamel or stainless steel container with a tight-fitting lid. Avoid aluminum saucepans - they cause the coffee smell and taste to disappear.

Select the volume of the container depending on the number of servings. For one, 300-400 milliliters is enough.

Roast or dry the grains, grind to medium or coarse grinding. Pour 2-3 teaspoons of ground beans into a bowl. Salt, sweeten and add spices to taste. Pour 100-150 milliliters of cold water into a container and place it on the stove.

Remove the pan from the stove as soon as foam appears and wait until it settles. Return to the stove and let it heat up again. Remove from the stove and leave for 2-5 minutes to let the drink infuse.

We use a French press

Boil the water and let it cool for 6-7 minutes. Rinse the French press with cooled liquid. Add 3 teaspoons of ground beans. Salt, sweeten and add spices as desired.

Pour 2-3 centimeters of liquid into the French press and mix thoroughly. Add the rest of the water. Cover the dish with a lid and leave for 5 minutes. Watch the time so that the taste of the drink is not bitter. Lower the plunger and squeeze out the coffee grounds.

Microwave to the rescue

Pour 2 teaspoons of ground grains into a mug and pour 250 milliliters of cold water. Place in the microwave.

10 seconds before boiling, turn off the microwave and remove the cup. Let the liquid sit for 3-5 minutes.

The time it takes to prepare a drink in the microwave depends on its power. Therefore, check the contents of the mug every 30-40 seconds.

How to cook in a Chemex

Insert a folded paper filter into the funnel. Heat the water to 95 degrees. Fill the filter with boiling water and drain the water, leaving the filter in place. Pour in 30 grams of coarse grains. Lightly wet the coffee slide and wait half a minute.

How to brew coffee in a mug

The method is similar to brewing tea. You need a porcelain or clay mug with thick walls, a strainer and finely ground roasted grains. If you don’t have such a cup, use a regular one, the main thing is deep and tall.

Pour boiling water over the mug and immediately add ground grains. Salt, add spices and sugar to taste, cover with a plate or saucer. Let stand for 3-5 minutes. Remove the plate, stir, strain through a strainer.

In the microwave

Brewing coffee in the microwave is the most unusual way to prepare this drink.

How to cook:

  1. Pour boiling water over a ceramic bowl or heat it in the microwave. To brew coffee in a microwave oven, it is recommended to select a container with a volume of at least 300 ml and fill it 2/3 so that the rising foam does not escape from the container.
  2. Pour 2-3 tbsp into a dry, warm cup. l. ground coffee.
  3. Fill the raw material with cold water and place the container in the microwave.
  4. Start the appliance and carefully monitor the condition of the drink: as soon as foam rises in the bowl, turn off the microwave immediately .
  5. Let the drink brew inside the oven for 1 minute and remove using a potholder.

Depending on the power of the device, it takes an average of 2-4 minutes to prepare a treat .

During preparation, you must monitor the state of the drink very carefully and not leave the stove for a second: coffee can boil and escape from the cup at any moment .

Microwave dishes should not be placed on a cold or wet surface, otherwise the cup may break due to temperature changes.

A microwave allows you to get a ready-made drink in the shortest possible time, but coffee from a microwave oven does not have outstanding taste or rich aroma .

In the French press

A French press is a convenient device for obtaining an invigorating drink without grounds . Depending on the volume of the French press, you can brew one or several servings of treats at once.

How to cook:

  1. Boil water, let the boiling water cool for 2-3 minutes.
  2. Pour ground coffee into the flask at the rate of 2-3 tsp. without a slide for 200 ml of water.
  3. Pour the raw material with a small amount of water, mix thoroughly and pour in the remaining water.
  4. Close the container with the lid without lowering the piston.
  5. Let the drink brew for 4-5 minutes.
  6. Lower the plunger and pour the finished coffee into cups.

Reference! If you want a drink with a slight bitterness, the infusion time should be increased to 7-8 minutes.
