Stuffed champignons - a quick snack when guests are on the doorstep

Wash the mushrooms, peel them, cut off the stems, but don’t throw them away - we will need them. Place a teaspoon of mayonnaise in each hat.

Cut the mushroom stems into cubes and mix with grated cheese. Finely chop the greens and add to this mixture. Add salt and mix again. The filling is ready.

Fill the mushroom caps with the prepared mixture, and then bake in a greased pan in the microwave for about 8 minutes. Serve to the table not only as an appetizer, but also as a hearty, nutritious second course.

Once about 5 years ago I was on the Atkins diet. For those who don’t know, this is a carb-free diet. So I had to diversify my menu from a small list of allowed products. This is how this recipe was born. I was very surprised that none of all my friends did this. The mushrooms were immediately appreciated and loved by everyone. For me, this is an ordinary everyday dish, since since then I always have at least 200 g of champignons in my refrigerator in case I come home from work and there is nothing, or I just want a light and satisfying dish, or I just want to quickly treat myself to something delicious. For friends, I prepare it for a holiday or just for a feast as an excellent appetizer with wine or champagne. An excellent recipe for when guests are on the doorstep.
