Stock up on minced meat in advance and make small meatballs from it, as large meatballs can boil over.
You will need:
- minced pork and beef – 1/2 kg;
- one chicken egg;
- a piece of butter;
- potatoes - 3 pcs.;
- half a carrot;
- parsley + dill;
- half an onion head;
- three cloves of garlic;
- salt - 15 g;
- water - 2 l;
- small pasta - 50 gr.
Step-by-step preparation:
- First, let's make meatballs: process the minced meat in a meat grinder, add finely chopped herbs, add egg whites and yolks, ground pepper and salt. Bring the mixture to a homogeneous consistency and form small balls.
- Throw them into a pan of water and wait until it boils. Do not forget to remove gray flakes of foam from the surface.
- It is necessary to peel and wash the vegetables. Chop the potatoes into medium slices, and the onions, carrots and garlic into small pieces.
- As soon as the water boils, throw the potatoes into the broth.
- Sauté the remaining vegetables in a frying pan with oil.
- Add the fried foods to the soup, followed by the pasta.
- 3 minutes before the potatoes and meatballs are ready, chop the remaining greens, and then turn off the heat.
Soup with meatballs for children
Products:
- Chicken breast - 0.5 kg;

Required ingredients:
- three potato tubers;
- salt - to taste;
- vermicelli - 0.1 kg;
- one onion;
- one carrot;
- black pepper and herbs to taste;
- minced meat - 0.3 kg;
- breadcrumbs - 40 g;
- one egg.
How to make soup:
- We place a pan of water on the gas stove and wait for it to boil.
- At this time, combine minced meat, pepper and salt, raw egg and breadcrumbs. Knead the mixture and form small meatballs with your hands.
- To prevent the meat from sticking to your hands, rinse your hands with water before modeling and do not wipe them.
- Process all vegetables according to the above procedure.
- Fry onions and carrots in oil until golden brown.
- When bubbles appear in the water, throw one meatball into it.

How to make Chicken Meatball Soup
Prepare the ingredients for the soup. Remove the skin from the breast and use a sharp knife to separate the meat from the bone. Peel the vegetables and rinse under water.
Cut the fillet into pieces and place in a blender.
Grind the meat with a pinch of salt until minced.
Transfer the minced meat into a bowl, add pepper and egg. Stir.
Add corn flour and mix the minced meat with a spoon until smooth.
Set aside the finished minced meat for now.
Finely dice the onion.
Cut the potatoes into strips or cubes.
Place vegetables in a multicooker pan: onions, carrots, potatoes. My carrots were pre-cut into thin slices.
Pour water over vegetables and add salt. Close the multicooker lid and select the “soup” mode, cook for 30 minutes.
While the vegetables are cooking, you need to form the meatballs. Take a teaspoon of minced meat and roll into balls no larger than a walnut with wet hands.
After the specified time, add vermicelli to the soup.
And add meatballs. Reset the program and start the “soup” mode again. Let the soup boil. Cook for 20-25 minutes until all products are fully cooked.
At the end of cooking, add the herbs and turn off the machine. The soup is ready.

Step-by-step cooking process
Chicken broth with bones is cooked in advance and filtered. Vegetables are washed and peeled. The pulp for minced meat is washed and dried. For the soup you will need a steel pan with a thick bottom.

Step-by-step cooking process
Vegetables are washed, peeled, and tomatoes are peeled. First, the vegetable dressing for the soup is fried and the meatballs are formed. Then everything is combined in a pre-cooked broth, which should be strained and freed from bones.
Further:
- Boil the rice until half cooked, add 0.7 liters of water, adding 0.5 cloves of garlic. After cooking, the cereal is washed with cool water, the liquid is allowed to drain, and the garlic is removed.
- Finely chop the onion and add it to a frying pan with oil. Fry until golden brown, turn off the heat.
- Clean, dried meat along with fresh herbs is ground in a blender or in a meat grinder. If a dry bouquet of herbs is used, they are added directly to the minced meat along with salt, spices, and half of the fried onion.
- Next, the minced meat is mixed with rice and egg.
- Form meatballs and place in the refrigerator.
- Chop the carrots with a grater, and chop the garlic with a wide knife. Add everything to the pan with the remaining onions and simmer for 12 minutes.
- Peppers are cut into semicircles, tomatoes into slices. Vegetables are poured into the frying pan.
- Add fresh tomato paste, salt, season with herbs and thyme. Cook for 5-7 minutes, then remove from the stove.
- Bring the container with the broth to a boil, add the meatballs one at a time. The foam is removed.
- After 7 min. add vegetable frying from the frying pan.
- Boil the soup over low heat for 10-12 minutes, then start dividing it into portions.
Serving rules, decoration
Pour the dish hot into heated soup bowls and garnish with parsley. Complete with Georgian lavash boat, cheese plate with suluguni and chechil. Sliced fresh tomatoes sprinkled with chopped garlic and basil are placed on the table.
With minced fish meatballs
Fish meatballs will give the soup a unique aroma and taste. In addition, this is an original way to serve boiled fish in broth.
