Greek coffee - a recipe for longevity

Ingredients (for 1 serving):

  1. 100 ml water;
  2. 1 teaspoon of finely ground coffee (originally the Robusta variety, preferably freshly ground coffee);
  3. sugar to taste.

Preparation:

1. Pour water into a Turk (preferably copper) and put it on low heat (the slower the heat, the better the foam in the drink), then add sugar and coffee (to avoid lumps of coffee and stir the sugar in a small amount of hot water). It is better for a Turk to take a tall and narrow one. High-quality foam in such a Turk will be achieved thanks to the uniform temperature distribution. Cook for a few minutes, wait until the coffee boils and the foam begins to rise, you can lift the Turk over the heat a couple of times, this will slow down the process of foam formation. Coffee should not be brought to a boil, otherwise it will have to be poured down the sink.

2. It is best to hold the finished coffee in the Turk for about one minute before pouring it into cups. Then you can pour the drink into cups. If you are preparing several cups at once, do not fill them all at once, first pour the foam into the cups and then add coffee to them. It is important that the foam is soft, fluffy and thick. According to the rules, when serving Greek coffee, you should also serve a glass of cold water with a few ice cubes.

Kaimaki

The legend about coffee, which appeared in Greece, is associated with kamaki - the foam that is formed when brewing coffee in a Turk. If the time has come for a girl to get married, then you can determine whether the groom likes you or not by the quality of the foam on the coffee. If it is dense and tall, the groom can count on reciprocity. If Greek coffee is served without foam, then the wedding will not take place.

The secret to making lush foam in the Turk is that the drink is never brought to a boil, but is removed every time the foam begins to rise. Despite the fact that in European countries this invigorating drink began to be consumed only a couple of centuries ago, traditional coffee has managed to be enriched with hundreds of different types and production methods. This recipe for natural Greek coffee is almost exactly the same as what is prepared in the East. The fact is that the Greeks were once under the rule of the Turks, then they freed themselves and declared independence. Some dishes and drinks from those times have remained relevant to this day.

For helliniko, you need to properly grind the grains, turning them completely into dust. The process goes like this:

  • Pour 2 teaspoons of powder into a copper pot, add sugar and add water.
  • Place on fire and watch when the foam begins to rise.
  • As soon as this happens, the Turk is removed from the heat and left for a minute.
  • Place on the fire again and bring to a boil.

The ritual is repeated three times. It is important to maintain a time interval between heating and cooling. This Greek equivalent of the oriental drink is served with a glass of water.

Coffee with cream foam, Greek style

Ingredients:

  1. cold water, 1 cup about 70 ml;

  • Turk with a wide bottom and a narrow neck, copper;
  • hot sand or, in its absence, a gas burner;

Pour cold water into the Turk, and then add ground coffee and sugar. Mix everything thoroughly, beat lightly with a spoon. Place the Turk with coffee in hot sand or place it on a gas burner over medium heat. After a while, when the surface begins to fill with bubbles, get ready to carefully watch how the foam forms and rises, filling with coffee cream.

It is important not to miss the moment of formation of bubbles and the appearance of foam. After the foam rises for the first time, quickly pour some of it into a cup, then place the Turk again in hot sand or on a gas burner; After 1-2 seconds the foam will rise again, pour some of this foam into the cup again. Do the same for the third time and slowly pour the remaining coffee into the cup.

Greek coffee with cream foam is ready!

Without this foam there is no real Greek coffee. Getting this foam is the whole point, it’s not for nothing that it’s called cream or cream, that’s what it is. Coffee must be drunk with cold water, so place a glass of cold water next to the cup.
