  • eggs – 4 pcs.;
  • butter – 250 g;
  • flour 430 – 500 g;
  • water – 450 ml;
  • sugar – 1 – 1.5 tbsp;
  • sour cream – 100 g;
  • salt - a pinch;
  • vanilla extract - sachet;
  • soda – 1 tsp.
  • proteins – 6 pcs.;
  • granulated sugar – 1.5 tbsp;
  • butter – 500 g;
  • vanillin – 2 tsp;
  • powdered sugar – 700 – 800 g;
  • gelatin – 15 g;
  • water – 60 – 80 ml;
  • food coloring – yellow, orange, black.
  1. Mix all dry ingredients together. Heat oil and water over low heat. Pour the oil mixture into the flour mixture and stir. When the mixture has cooled, add eggs and sour cream. Beat well with a mixer.
  2. Prepare 2 hemisphere molds. Pour the dough into them. Bake for 40 – 50 minutes. T – 180 °C. The tops of finished biscuits need to be cut off so that they are stable.
  3. Pour granulated sugar into the whites. Beat everything until a fluffy stable mass is formed. Continuing to work with the mixer, add the oil in several stages.
  4. Grease one part of the dessert with the prepared cream. Place the other half on top of it. Also cover the entire ball with a cream base.
  5. Using a pastry bag, pipe vertical stripes along the entire perimeter of the piece. Use a wide nozzle. Press the seams with your fingers. Wear gloves. Leave the treat in the cold for 15 minutes.
  6. Outline the eyes, nose, and mouth on the frozen cream. Prepare mastic. Gelatin needs to swell in water. Then you need to warm it up, add powder, and mix everything thoroughly. Divide the mastic mass into several parts and paint them with different colors.
  7. Roll out the yellow mastic dough into a thin pancake according to the size of the base on which the cake will stand. Then cover the mold with it. Trim off the rest.
  8. Make a figurine of a kitten. You will need 70 g of fondant (mastic). Form a muzzle, sculpt ears. Cut out 6 circles of three colors of different sizes. Stack them one on top of the other. These will be the eyes.
  9. Make an orange triangular nose. Roll sausages - legs, tail. Secure the parts with water or vodka. Place all elements on toothpicks and thin skewers.
  10. Glue the orange, yellow, and white strips together with water. Roll them out with a rolling pin into a tricolor ribbon. Cut small triangles out of it and place them around the treat.
  11. Cover the base with orange mastic. Use a pastry stick to form the outline of the pumpkin. Cover the top with yellow fondant, shade the mouth, nose, eyes. Place the cat on top.

Recipe 1 - Pumpkin cake (without mastic)

The undisputed favorite among the delicacies of the upcoming celebration is pumpkin cake for Halloween.

Dough composition: 1 cup purified vegetable oil; 1 glass of dry granulated sugar; 1 cup brown sugar; 3 fresh chicken eggs; 400 g pumpkin puree; ¾ cup sour cream; 1.5 tsp. vanilla extract; 2 and a quarter cups of flour; 1.5 teaspoons of regular baking soda; 1 teaspoon (without top) salt; 1 teaspoon grated nutmeg; 0.5 teaspoon ground ginger.

Swiss meringue cream: ¾ cup egg whites; 1.5 cups dry sugar; 500 g butter (warmed at room temperature); a pinch of salt; 2 teaspoons vanilla extract; 110 g marzipan or mastic; Dyes of orange and green colors.

Preparation:

For this recipe, you will need baking dishes in the form of a deep bowl, the number of which should be divisible by 2.

Before starting work, you need to preheat the oven to 180 degrees. Grease the molds with butter or refined oil.

Step-by-step instructions: preparation steps

First you need to beat the butter, both types of sugar and eggs with a mixer (or on a food processor). As soon as the mass becomes homogeneous, mix it with pumpkin puree, vanilla sugar and sour cream.

In a separate bowl, whisk together flour, salt, baking soda and spices.

Combine all the ingredients and knead a smooth liquid dough.

Pour the mixture into the molds without filling to the top.

Place the molds on a baking sheet and bake in the oven for about 40-50 minutes. Baking time will depend on the size of the prepared pans.

As soon as the dough is baked, it must be removed from the oven, and then removed from the molds and allowed to cool.

After this, you can start preparing the cream. First you need to mix the whites with sugar, and then put them in a water bath. This mass must be constantly stirred (do not beat!) with a silicone spatula.

As soon as the sugar has completely melted, the mass must be removed from the heat and whipped with a mixer until a fluffy mass is obtained (the cream should stick well to the whisk).

Continuing to beat, gradually add oil to the protein mixture - 2 tbsp. at once. As soon as the oil is mixed with the cream, add another portion.

IMPORTANT ! Very often, after about half the required amount of butter has been added to the cream, the whipped mass becomes loose and unappetizing. This is normal and goes away as soon as the rest of the butter is added and the cream is well beaten.

After the cream is completely ready, you need to add orange dye to it and stir well.

Use the resulting mixture to grease one half of the cake and cover it with the other half. You should get a ball - the future pumpkin.

Then the entire surface of the cake is coated with the remaining cream. Here you need to make sure that the layer is dense enough. The cake layers should not be visible from under it.
