Iced coffee
Iced coffee is a chilled drink with the addition of ice cream.

Origin

Austria is considered the birthplace of the recipe. According to legend, one day a visitor to one of the cafes ordered a cappuccino, but the barista did not have milk, and he replaced the missing component with creamy ice cream. The cool, sweet dessert delighted the guest, and over time the owner of the coffee shop introduced it to the menu.

From its supposed historical homeland, the recipe quickly spread to other European countries, but gained particular popularity in France, where it got its name.

Some sources claim that the concept of “glace” was originally applied to chilled espresso with liqueur. According to other sources, this could be the name of a coffee drink with yolk.

What is iced coffee?

Glace is a cold coffee drink made from 3 parts Americano and 1 part ice cream. Most often, the base for this dessert is made weak and sweet.

The ice cream cap not only softens the taste, but also gives it an interesting layered structure.

To prevent the top from melting before consumption, crushed ice, cold cream or milk are added to the coffee, and only then a ball of ice cream is placed in the cup.

Coffee

Since the glace has a mild flavor, to prepare it you need to use ground Arabica beans or a mixture of Arabica and Robusta. The share of second grade should not be more than 10%. Recommended roasting is medium.

Coffee varieties
Inexpensive blends of Arabica and Robusta are suitable for glace.

Ground beans are prepared in a coffee machine, French press, coffee maker or cezve (Turk). To simplify the recipe, you can use an instant or brewed drink as a base.

Ice cream

The following types of ice cream are suitable for the classic recipe:

  • creamy and chocolate ice cream;
  • Creme brulee;
  • dairy;
  • homemade berry sorbet.

Water

As for coffee, it is best to stock up on a mixture of Arabica and ten percent Robusta. Ground coffee that has slightly lost its aroma will also work. As for roasting, medium is best. This way the finished drink will taste pleasant and less bitter. Coffee is prepared both in a coffee machine and in a Turk. If a Turk is used, the drink is filtered. Cooking method:

  1. Brew coffee using an iced machine or French press.
  2. Strain the hot drink and carefully pour into a prepared serving bowl.
  3. Cool the ice cream, cut out the balls.
  4. Place ice cream in glasses with coffee.

Thick drinking straws are inserted into the cups, which are recommended to be rinsed in advance with cold water. The glasses themselves are placed on napkins or cup holders, and a coffee spoon is included. This is the culture of serving ice cream.

Classic glass

Instead of ground coffee, the recipe allows the use of instant coffee, which, of course, is inferior in taste and aroma to the natural product.

Cooking secrets

The process of preparing glace has several important nuances:

  1. For a summer dessert, take completely chilled coffee, and for a winter dessert, warm coffee. In the first case, the temperature of the finished drink is +10...+20°C, and in the second - +30...+32°C.
  2. When adding whipped cream, do not mix it with hot coffee. High temperatures and acidified environments can cause the product to curdle. A cap of whipped cream is carefully placed on a warm coffee base or on top of ice cream.
  3. It is recommended to add spices (vanilla, cloves, ginger) to the base during the cooking process. Cinnamon is suitable both for enriching the aroma and for decorating the dessert. To give Americano an unusual flavor, you can add dried figs or cardamom to the cezve.
  4. If you use sweetened cream (for example, from a can), you can do without adding sugar or honey.
  5. To obtain a rich taste, you can mix several types of topping. Recommended combinations: chocolate-cherry, vanilla-berries, coconut-pineapple, mint-lemon.

Proper serving of coffee

Glace is served in a tall, cone-shaped glass. Transparent walls allow you to see a clear boundary between the dark base and the light ice cream cap.

You can also use latte glasses or mulled wine cups when serving.

A portion of chilled Americano is poured into a clean container, and a ball of ice cream is carefully placed on top. Syrup and ice are placed at the bottom of the glass. There is also a reverse variation of serving: ice cream is placed on the bottom, which is poured over with coffee. The finished drink turns out less beautiful, but more homogeneous. The light treat floats to the surface, mixing with the base.

The glass can be decorated with berries, grated chocolate, shaped confectionery toppings, cookie slices or nut shavings. It is served with a thick tube and a small spoon with a long handle.

Glace serving
The finished coffee can be sprinkled with chocolate chips or cocoa on top.

Interesting Facts

There are several interesting facts about ice coffee:

  1. In Italy there is a dessert with a similar method of preparation, but a different ratio of ingredients. It is called affogato, which means "drowned". To prepare the delicacy, topping and 10-20 ml of liqueur are applied to the bottom of the glass, and 50-60 g of ice cream are laid out. The ice cream is topped with a shot of hot espresso. The finished dish is decorated with grated chocolate.
  2. The recipe for the drink depends on the country. For example, in Europe it often includes cognac, and in South America it often includes light or dark rum.
  3. Replacing espresso or Americano latte allows you to get the so-called. “white ice”, which has a soft and sweet taste without bitterness. This drink can even be served at children's parties.

Thanks to its characteristic color and contrast, shades of nail polish, hair dye and other cosmetics are often named after this dessert.

Composition of iced coffee

The traditional version of the drink is a chilled dessert. It consists of coffee with a scoop of ice cream in a 3:1 ratio. There may be several ways to prepare it:

  • espresso or other drink brewed in a cezve is used. The recipe appeared long before the invention of coffee makers and coffee machines. Then, to prepare a cocktail, they used oriental coffee;
  • It is recommended to use cream, vanilla or regular ice cream. Additives simply interrupt the taste of the coffee itself and partially mask its aroma;
  • If desired, you can add sugar to the ice cream . It is introduced into the composition before the liquid has cooled. Otherwise, the crystals simply will not be able to dissolve;
  • Instead of granulated sugar, various syrups can be used. They will not only add a pleasant sweetness to the cocktail, but also enrich the flavor bouquet.
