What should be the ground coffee?

There are several dozen varieties of coffee, and therefore flavors. But the main ones are Brazilian Arabica Santos and Robusta. Depending on the region of growth, coffee beans may have special, unique aromatic and taste qualities. They, like a sponge, absorb the characteristics of the soil composition, air, and are affected by the amount of moisture and sunlight. Which ground coffee is best and what beans is it made from?

Arabica is considered the most fragrant, which can give a slight sourness and have nutty, chocolate, caramel and floral notes. High-grade coffee is made only from Arabica beans, and only one variety or blend.

Robusta gives the drink strength and bitterness, but it does not differ in its special aroma and taste. Today, scientists are working on creating new breeding varieties of Arabica and Robusta that would be resistant to diseases and have high organoleptic properties.

Arabica Santos is the world leader and the best variety for blending

The best Arabica varieties are grown in Brazil, Jamaica, Guatemala, and Colombia. Beans from Ethiopia have a chocolate aroma, those from Brazil have a hazelnut flavor, and those from Kenya have berry notes. Accordingly, a combination of Arabica beans from Ethiopia and Brazil will give many people's favorite natural nutty-chocolate flavor without the use of synthetic flavors.

Ground coffee is usually inferior to beans. Why? Because it rarely contains selected Arabica coffee, and the list of additives includes ground chicory, starch, and cereals. But there are good brands that create wonderful blends from beans purchased in different regions. Ground coffee can be:

  • flavored and unflavored;
  • with and without caffeine.

True gourmets will prefer a product without flavoring, but with caffeine. Another important point for a ground product is the degree of grinding, which determines the option for preparing the drink.

This is what different grind coffee looks like

  • Coarse grinding involves grinding the grain for 10 seconds in order to obtain coarse particles up to 0.8 cm in size. This product is suitable for brewing in a Turk or cezve, and the extraction time is about 10 minutes.
  • Medium, or universal, grinding is carried out in 13 seconds. Suitable for brewing in a cup, Turk, coffee maker. Brewing time 5 minutes.
  • Fine grinding is obtained by grinding the grain for almost 20 seconds. Ideal for use in a filter coffee maker. Infusion time is 2-4 minutes. This finely ground coffee has the longest shelf life.
  • Fine espresso is suitable for coffee machines specialized in brewing Italian espresso.
  • Ultrafine grinding is quite rare; it turns the grain into dust. This product is suitable for making Turkish coffee.

A delicious coffee drink made from ground beans involves the appearance of thick, creamy foam on its surface and the release of a whole bouquet of aromas. But only a product that is consumed immediately after grinding and is not stored for more than 2 weeks can have such qualities. But it is not always the case. If coffee is packaged in sealed cans, it retains its qualities for a long time, but quickly loses them after opening.

Good ground coffee should not have any foreign odors or inclusions. You can check this as follows. Pour water into a glass and pour a spoonful of coffee into it. The ground grain will remain floating on the surface, and additional inclusions will settle to the bottom, may stick together and even color the water. If the selected product has passed the test, most likely the production monitors quality and the brand can be trusted.

Without a doubt, whole bean coffee is the best, followed by ground coffee and instant coffee lasts on the list. If you compare which is better - ground or instant, all the advantages will go towards the first.

2nd place

Camardo, originally from sunny Italy, deservedly takes second place in the ranking. The brand was founded several decades ago and remains a family business to this day. The line includes both 100% Arabica coffee of the highest quality and a drink completely devoid of caffeine.

Raw materials are supplied from ecologically clean areas of Africa, Brazil, South America and Guatemala. The bronze medalist in the ranking of the very best is another “Italian” called Mauro. Produced in the best traditions of classic Italian coffee. The main specialization of the manufacturer is espresso; most of the blends in the line are intended for lovers of this drink. But the brand is not limited to espresso: the range includes varieties with different ratios of Arabica and Robusta - for every taste. Mauro's strength is medium, the roast is medium to low. 4th place

The list of the best brands of an invigorating drink cannot be without a Russian manufacturer: Living Coffee confidently takes 4th place. It is worth highlighting the original packaging of the brand: coffee is supplied in vacuum metal cans weighing 250 g. The price of such a jar is from 500 to 2500 rubles.

Molango

The rating of the best manufacturers has come to an end, which is designed to help in deciding which ground coffee is the most delicious. Of course, this question is purely individual, but few people will doubt the quality of the products of the above brands.

Ground coffee: varieties, varieties

There are a huge number of varieties of ground coffee, which have completely different taste characteristics, depending not only on the type of coffee beans and the place of their collection, but also on other important features: the degree of grinding and roasting, the country of origin, the addition of various flavoring substances, for example, natural vanilla extract or liqueur. If you have never tried ground coffee before, when going to the store, you should find out what information on the label you should pay attention to first.

Grinding degree

To make ground coffee from coffee beans, they are first roasted and then crushed (ground) in special machines called roller mills. The degree of grain grinding determines the uniformity of the finished drink, as well as its texture, consistency, taste and aroma. If you are a lover of fine and refined coffee, preference should be given to a fine or ultra-fine grind product. Turkish coffee is prepared from very finely ground beans. It is cooked in special pots with the addition of cane sugar, caramel or milk cream. For a “coarser” and tart drink with a characteristic bitterness, you can use medium and coarse grind coffee: it is this type of coffee that has a pronounced tonic effect and activates the body’s own energy resources, especially in the morning.

Roasting degree

The degree of roasting of beans is another important criterion for people who value coffee for its unique velvety taste. Just like the degree of grinding, it can be weak, medium, strong and very strong. Not only the healthfulness, physical, chemical and organoleptic properties of the product, but also its taste depend on how long the grains are roasted before grinding. There are four main degrees of roasting:

  • Very strong. It is also called dark roasting, since the essential oils that are released from green coffee beans give them a pronounced dark chocolate color and a characteristic, very bright aroma. This coffee is very strong and expressive, but the large amount of caffeine alkaloid does not allow you to drink it in the afternoon due to its strong stimulating effect on the nervous system.
  • Strong. Strongly roasted coffee is also quite tart and leaves a bitter aftertaste, but its taste is softer compared to dark roasted coffee (the taste of such a drink is called velvety).
  • Average (Viennese). Medium roasting of the grain allows you to get a rich, aromatic drink with a slightly sweet tint. This coffee goes well with milk and caramel cream.
  • Weak. This method of heat treatment of coffee is called light roasting, since the shell of the grain does not have time to fully open, which leads to incomplete release of esters. Lightly roasted coffee has a caramel hue, a soft, refined taste and is suitable for those who like to drink a couple of cups of aromatic drink in the afternoon.

The classic roasting option is the Viennese method: this coffee tones well and has a fairly rich, but at the same time quite mild taste and a very bright aroma.

Bean variety

More than 300 varieties of coffee are known in the world today, but Arabica and Robusta remain the most common and consumed. Robusta is a cheaper variety that is often added to instant coffee drinks to give them a rich flavor (Robusta contains almost twice as much caffeine as Arabica). The aroma and taste characteristics of Robusta, from the point of view of true coffee connoisseurs, are weaker than those of Arabian coffee, but quite a large number of people prefer this particular type for its rich astringency and weak bitterness.

Experts consider the Arabica variety to be the most delicious and high-quality coffee. A product labeled "100% Arabica" always carries a higher price than a blend coffee because it is a premium drink.

Types of ground coffee

There are several types of ground coffee, which differ in the degree of grinding. What type of ground coffee should I choose? This

depends on how you are going to prepare the drink, for example: in a Turk, drip coffee maker, espresso machine or directly in a cup. Each of these options requires the use of coffee of a specific grind. Most often, information about the degree of grinding and recommendations for using a particular type of ground coffee are indicated by the manufacturer on the product packaging. In total, there are five main types of ground coffee.

Ground coffee for espresso machine

For devices of this type, it is recommended to use coarse (or coarse) coffee. During the preparation process, water is passed through the ground grains under high pressure, which helps to obtain a drink with a rich flavor and aromatic component.

Ground coffee for drip coffee maker

Drip coffee makers require medium grind coffee. Particles of such coffee do not slip through the filter of the device, and gradual brewing ensures the desired degree of extraction.

Ground coffee for brewing in a cup

In this case, it is preferable to use finely ground coffee. Particles of this coffee quickly settle to the bottom, after which the drink is ready for drinking. Larger fractions, as a rule, do not settle in the cup, which negatively affects the taste of the finished drink.

Ground coffee for geyser coffee maker

For geyser-type devices, very finely ground coffee is suitable, which will allow you to get a strong drink with a pronounced coffee bitterness. In addition, this device can use universal medium grind coffee.

Ground coffee for Turkish

Traditionally, when preparing a Turkish drink, ultra-fine ground coffee, the so-called coffee flour (powder or dust), is used. The extremely fine grind ensures a rich, thick taste of the drink and ensures that the coffee particles settle quickly.

The type of ground coffee and the degree of grinding of the beans are very important nuances that you should pay attention to when choosing a product. The correctly selected type of ground beans helps to obtain a drink with an excellent, harmonious taste and rich aroma, which real coffee should have.

Despite the fact that coffee is not an essential food product, its choice should be taken very seriously, since the degree of pleasure and satisfaction of taste needs directly depends on the quality of the purchased drink. To avoid making a mistake and purchasing a product that is of poor quality or does not meet your needs, we have collected expert advice to help you make the right choice.

  • Before buying ground coffee, you should decide exactly how you plan to prepare it. For example, if you have a special Turk or espresso coffee maker at home, you need to choose fine and ultra-fine grind coffee, and to prepare coarse coffee you will first need to purchase a French press.
  • The market leaders producing the highest quality elite and premium coffee are Italy and Germany.
  • The higher the degree of roasting of the beans, the stronger and richer the taste of the finished drink will be. This must be taken into account if you do not like coffee with a bitter or tart aftertaste.
  • The strongest coffee is made from Robusta beans. It contains a lot of caffeine, so this coffee invigorates and tones well.
  • Arabica coffee has a slight acidity and a rich, deep aroma.
  • The freshest, most delicious and high-quality coffee is stored in vacuum packaging.
  • Loose coffee may only be sold in paper bags. It is recommended to store coffee in the same bag at home, isolating it from other products and substances.
  • The most natural coffee reveals itself within 7-10 days after purchase, after which the taste and aroma gradually become less intense.

Fans of unusual flavors should pay special attention to the quality of ground coffee. They must remember that only natural spices, such as vanilla, cinnamon, cardamom, can be added to ground coffee. If you find coffee on the shelves with the aroma of fruits or hazelnuts, you are looking at a product with the addition of chemical flavors and dyes, which not only distorts the taste of real coffee, but can also be dangerous to your health.

What types of ground coffee are there, how to choose

Let's start with the criteria that you need to pay attention to when choosing ground coffee, with all the abundance of its varieties. The first is the variety.

The most common coffee varieties on the shelves of our supermarkets are Arabica and Robusta. The most aromatic and pleasant-tasting coffee is made from pure Arabica. Although Robusta also has a number of certain advantages.

  • Firstly, it contains more caffeine than other types of coffee, due to which the prepared drink has a more tonic effect.
  • Secondly, robusta is characterized by an unusual bitter taste, which exotic lovers will appreciate, especially in combination with chocolate and berry additives.

Next, we turn our attention to roasting. This is also an important point, since the strength of the coffee, the richness of taste and aroma depend on its degree. There are three types of roasting: weak, medium and strong. It should be noted that from different manufacturers, coffee of the same roast can vary dramatically in taste.

When choosing coffee, you must remember that the stronger the roast, the more noticeable the bitterness of the drink will be. Therefore, light and medium roast coffee is most popular.

The next criterion that is worth paying attention to is additives. Currently, supermarket shelves are filled with an incredible amount of coffee with a wide variety of additives. Here you can find coffee with extracts of mint, orange, various nuts, cognac...

Most of these are synthetic additives, so those who want to try something new and unusual are better off adding personally purchased spices to their coffee. It could be cinnamon, fresh mint, nutmeg, ginger. They will add a touch of piquancy to the drink.

Freshness is also important for ground coffee. In this case, freshness is determined by the date of manufacture. Therefore, when choosing a drink, be sure to pay attention to this criterion, since even the best varieties of ground coffee quickly lose their taste. The best alternative to coffee from the supermarket is to buy coffee from a specialty store, where the aromatic coffee beans are ground in front of you.

The packaging of the coffee is also important. Nowadays, there are several types of packaging, thanks to which manufacturers manage to preserve the freshness of coffee, its aroma and taste. One of the best options is coffee in hard packaging, since it does not allow air to pass through and retains the characteristic features inherent in this type of drink.

But soft packaging also has its own secret. This is a special valve, thanks to which you can check the freshness of the product by feeling, when pressed, the characteristic smell of coffee. Also, in most cases, the valve is a guarantee of packaging the coffee immediately after grinding.

The degree of grinding also varies. Which one to choose depends on where and how you are used to making coffee. There are only 5 grind levels for coffee:

  • Coarse grind. Coffee of this grind is most often prepared in a coffee maker or coffee pot.

  • Average. This grind is not too different from the coarse grind, except that the best device for preparing it is a coffee machine.
  • Small. Coffee of this grind can only be prepared in a Turk.
  • Ultra-fine grind. It is mainly used to prepare espresso in special coffee machines.
  • Powdered grinding. An excellent option for Turkish coffee lovers. Its consistency will give you a rich taste that will not leave anyone indifferent.
