To prepare we need:
- Puff pastry - half a kilogram;
- Cottage cheese – 350 g;
- Raisins (light) – 150 g;
- Sugar – 2 tbsp. l;
- Eggs – 2 pcs.
Prepare the croissants in the following order:
- Soak the raisins in boiling water for five minutes.
- At the same time, prepare triangles of dough.
- Mix the swollen raisins with sugar, egg and cottage cheese.
- Add the filling and carefully wrap the pieces.
- Let the croissants rest for 10 minutes.
- Place in a preheated oven for 10-20 minutes.

From yeast-free puff pastry
Yeast-free puff pastry has many advantages - it is plastic, you can wrap any filling in it, and there is practically no fuss with it (especially when bought ready-made in a store). It is from this dough that the most delicious and fastest croissants are obtained.
Ingredients:
- dough – 50 gr.;
- sugar – 2 tbsp. l.;
- egg (yolk) – 1 pc.
Defrost the dough, roll out and cut into triangles of equal size. Cut each piece from the wide side, then fold the separated edges in opposite directions.
Next, the triangles are folded towards the sharp edge, then they are given a rounded shape (“horns” inward) and coated with yolk whipped with sugar on top. The workpiece is baked on a parchment-lined baking sheet in the oven (preheated to 220⁰C) for 12-17 minutes.
Croissants with cheese made from homemade yeast dough
Ingredients needed to make croissant dough (serves 7)
- Flour - 500 g
- Milk – 300 ml
- Dry yeast - 15 g
- Butter - 360 g
- Sugar - 60 g
- Salt - 1/3 tsp
- Eggs - 1 piece
Filling ingredients:
- Dutch cheese - 200 g (or mozzarella)
How to make croissants with cheese from homemade yeast dough:
- Add salt, 50 grams of sugar, dry yeast to the sifted flour and mix with a mixer at minimum speed, gradually pouring in milk. Then add 60 grams of soft butter and mix all ingredients for at least 10 minutes.
- After this, knead the dough by hand, forming it into a ball. Place in a bowl, wrap cling film on top and leave the dough for 1.5 hours until it rises and doubles in size.
- Unwind the film, place the dough on the table and roll it into a rectangle, about one centimeter thick. At the same time, you need to take the butter (which was taken out of the refrigerator in advance), wrap it in parchment and, using a rolling pin wrapped in cellophane, roll it into a rectangle.
- Place the formed layer of butter on one of the edges of the dough and cover it with the second edge like an envelope. Now you need to roll out the dough so that it is about 1 centimeter thick. Fold into four, wrap in parchment paper, place in a plastic bag and refrigerate for 30 minutes.
- Then you need to roll out the dough into a rectangle again, fold it in the same way, wrap it, but without oil, and put it in the refrigerator for a couple of hours.
- Remove the dough from the refrigerator and roll it into an elongated rectangle.
- Cut the cheese into not very long cubes. The length of the bars should not exceed the width of the widest part of the dough triangles.
- Using a regular knife or a special pizza cutter, cut the dough into triangles.
- Place a block of cheese on the edge of the widest part of the triangle and roll the dough from the widest part to the narrow one. The cheese should not protrude beyond the dough, but remain inside the roll. It is very important to curl the edges of the roll. This is necessary so that when baking the cheese does not leak out of the croissants onto the baking sheet. Form the remaining croissants in the same way.
- Place the croissants on a parchment-lined baking sheet, spacing them well apart. It should be taken into account that when baked, the products increase in size by 2-3 times. Beat the egg with a fork until smooth and brush the products with the beaten egg.
- Place the baking sheet in a preheated oven at 190 C and bake the croissants for 15-20 minutes or until golden brown. The exact time depends on the features of your oven. Serve the finished croissants while hot, with aromatic coffee or cocoa.
On a note. Turn on your oven in advance, while still cutting the cheese, so that it has time to warm up properly.
Croissants with chocolate
What could be tastier and more appetizing than chocolate pastries? That's right - baked goods with even more chocolate!
We only need two ingredients:
- Puff pastry dough - half a kilogram;
- Chocolate – 100 g.
Preparation:
- Prepare the dough. Lightly shape it with a rolling pin, cut it into triangles, and make cuts.
- Take a chocolate bar and break it into pieces that will fit comfortably in a triangle.
- Place a piece of chocolate at the end of the cut.

- dough – 500 gr.;
- poppy seed – 100 gr.;
- salt and powdered sugar - 1 tsp each;

- egg (yolk) – 1 pc.
From the finished puff pastry you need to cut out and roll out even triangles to a thickness of 0.5 cm. Coat each piece generously with butter, sprinkle evenly with powdered sugar, then with poppy seeds.

Preparing croissant dough

The most popular are two types of puff pastry: unleavened and mixed with yeast. The first is done quickly, the second will take a little more time, but both contain a minimum number of components.
Puff pastry without yeast
The ingredients must be kept in the refrigerator before cooking. The finished dough should also be stored there. The molded products are immediately placed on a baking sheet and sent to the oven, otherwise they will lose their shape. 500 g of flour will yield 8-10 croissants.
For a portion of dough you will need:
- 1/2 kg wheat flour;
- 1 raw egg;
- 400 g frozen butter (fat content not less than 82%);
- 1/2 tsp. salt;
- 1 tbsp. 5% vinegar;
- 250 ml ice water.
The mixing order is as follows.
- Break an egg into a bowl, add salt, pour in vinegar and chilled water. Cover the bowl with cling film and place in a cool place.
- Place butter for 30 minutes. into the freezer, then finely chop it with a knife and mix thoroughly with flour.
- Press down the middle and pour the cooled mixture of water, vinegar and egg into the hole.
- Quickly stir the dough until smooth, moving the edges towards the center, and place it in the cold, wrapped in film.
Puff yeast
Dough made with yeast will require more time and effort, but products made from it will turn out more fluffy and layered. It is better to bake croissants made from puff pastry dough by heating the oven to a temperature of 220-240 °C.
Intense heat forms a crust on yeast baked goods, which will not allow the butter to melt and leak out. Thanks to this, its texture will remain soft.
For a portion of dough you will need:
- 1/2 kg wheat flour;
- 1 raw egg;
- 8 g “fast” yeast;
- 100 ml milk;
- 100 g frozen butter (fat content not less than 82%);
- 1/2 tsp. salt;
- 2 tbsp. granulated sugar;
- 100 ml water at room temperature.
The mixing order is as follows.
- Sift the flour and pour into a bowl, mix it with 2/3 of the sugar, salt and chopped frozen butter.
- Heat the milk slightly, dissolve the yeast in it, add the remaining sugar and egg. After a few minutes, add water and pour the mixture into the flour.
- Mix the dough with a mixer at low speed. Cover the bowl with film and place in a cool place.
Recipe for croissants made from puff pastry dough
Classic puff pastry croissants are an excellent addition to breakfast or a sweet table. Family members and guests will definitely appreciate the taste of homemade baked goods.
Ingredients:
- water – 200 ml.
- warm milk – 200 ml.
- salt – 1/3 tsp.
- sugar – 1 tbsp.
- dry yeast – 1 sachet (10 g.)
- vegetable oil – 2 tbsp. l.
- egg – 2 pcs. (remove one yolk to grease the croissant)
- sugar – ½ cup (optional)
- flour – 750-800 gr. (about 6 partial glasses)
- butter – 180 gr. (soft for layering)
- boiled condensed milk – 1 can
Step-by-step preparation.
Pour water into a container, add milk, warming it up a little beforehand.
Add sugar and salt, add yeast, stir.
Cover with a lid and leave to stand for 8-10 minutes.
Then add 2 tablespoons of vegetable oil and 2 eggs (set aside 1 yolk for greasing).
You can add more sugar. In this case, the croissants will have a sweet filling, so no sugar is needed.
Add flour and mix well by hand. You don't need to add all the flour at once, you need to add it in parts.
Knead the resulting dough and place in a warm place, covering the top with cling film.
When it is ready, remove it from the container and divide it on the board into 10-12 approximately equal pieces.
Roll them into balls and cover with a towel.
Now each part needs to be rolled out, approximately 3 mm. The dough turns out soft, so it rolls out easily.
Each rolled out part should be thinly greased with butter at room temperature and placed on top of each other.
The last part does not need to be greased with oil, but simply placed on top (similar to a multi-layer cake). Sprinkle a little flour and roll everything out well on both sides (the thickness should be 5-6 mm).
Cut the dough into 4 equal squares, which in turn are cut diagonally into six triangles. Make a small cut along the edges in the center of each triangle.
Place 1 tsp on each triangle. condensed milk, then roll into croissants. Where the cut was made, move the edges a little, as if hugging the filling, and then simply roll it into a roll as usual.
Place them on a baking sheet lined with parchment. 1 chicken yolk diluted with 1 tbsp. l. water and brush the top of each croissant.
Place in the oven to bake at 180 degrees for 30-35 minutes.
They turn out a little crispy and appetizing; you can sprinkle powder on top.
