Beans contain a huge amount of useful substances. True, green coffee does not always have a positive effect on the body. Excessive consumption of caffeine-containing drinks can cause harm. Possible negative changes include:

  • stimulation of cardiac activity, increased blood pressure and increased heart rate;
  • migraine;
  • pathological fatigue;
  • insomnia;
  • irritability;
  • depression;
  • muscle pain;
  • nausea.

In addition, with constant exposure to caffeine, vitamins and microelements are removed from the body and blood circulation is impaired. Therefore, you should drink drinks containing a natural stimulant in moderation.

Features of green coffee

Green coffee retains a large amount of beneficial substances that are not found in black coffee. This is achieved due to the absence of heat treatment. The coffee beans retain their natural olive color. They turn black during the roasting process.

Green coffee beans have the following characteristics:

  • olive shade;
  • the degree of humidity is higher than that of black coffee;
  • The surface of the grains is evenly colored, there are no stains or traces of insect activity.

Green coffee retains a large amount of beneficial substances.
A drink made from green coffee beans is inferior in taste to black coffee. It does not give the same rich aroma and is characterized by a tart herbaceous odor. The taste is astringent, slightly sour, slightly reminiscent of unripe persimmon.

Despite all this, green coffee is much healthier for the body and human health than black coffee.

How to Roast Green Coffee

Roasting green coffee beans at home is quite simple. To complete this task, you need to do the following:

  1. The frying pan is initially heated, after which the beans are placed on it in one layer.
  2. Frying begins over low heat. It is increased gradually.
  3. The grains are fried for 5-15 minutes, stirring constantly.
  4. Then the fruits are cooled and peeled.

It is recommended to use a separate frying pan for coffee. This is due to the fact that the grains absorb foreign odors.

Do not heat beans in the oven. There they will fry and acquire an unpleasant, bitter taste and burnt aroma.

How to brew correctly

You can prepare green coffee in a cezve, French press, coffee pot, coffee machine and coffee maker. Therefore, everyone can choose the most suitable option for themselves. The brewing technology will be different.

If in such modern units as a coffee maker and coffee machine, this process is fully automated, then when using other devices, all actions must be performed manually.

In the coffee pot

Preparation boils down to the following steps:

  1. Pour 200 ml of water into the coffee pot and place it on the stove.
  2. When the liquid begins to boil, remove the container from the stove.
  3. Add 2 teaspoons of green ground coffee to the mixture and mix.
  4. Infuse the drink for 5 minutes and pour into cups.

In Turk

The coffee drink is prepared as follows:

  1. The cezve is filled with water and placed on the stove.
  2. At the moment the liquid begins to boil, add 2-3 teaspoons of ground grains to the composition.
  3. When foam appears on the surface, the dishes are temporarily set aside.
  4. After the foam settles, the Turk is put back on the fire.
  5. Wait two more times for the foam to appear, not forgetting to put the cezve aside for a while.

In the French press

Brewing in a French press is done by performing the following steps:

  1. The container is heated with hot water.
  2. The liquid is drained.
  3. 2-3 teaspoons of ground coffee are poured into the French press.
  4. Then boiling water is poured in.
  5. The dish is closed with a lid, but within 5 minutes the filter is not compressed.
  6. Slowly the rod begins to move, thus moving the filter to the lower part of the structure.
  7. The liquid that has been separated from the grounds is poured into cups.

How and why coffee is roasted

Those who are already familiar with raw coffee will agree that in terms of smell, density, color, and taste, green coffee beans are very similar to ordinary peas. Hard, wet “pebbles” are extremely difficult to grind. Coffee grinders, meat grinders, blenders break, and only with patience can you grind them using muscle power and a hammer. This process is not easy or pleasant. Therefore, suppliers quickly switched to the ground version of supplying unroasted coffee.

Interesting: if you try to brew coffee from unroasted, but still ground coffee, the drink will turn out a little astringent, sour in taste and, surprisingly, brown in color! Some people even like this kind of non-standard coffee, but, to be honest, there are not many of them.

The purpose of roasting is to reveal the benefits and taste of coffee beans. During its process, a huge number of chemical transformations occur inside the grain. At first glance, the roasting technology is not complicated, but it requires constant attention and skill of the roaster.

There is such a profession - roasting coffee

The special equipment used for roasting is called a roaster. Inside the unit, when exposed to heat, pale green raw coffee beans acquire a brown color and new properties.

Coffee roasters are called roasters. The quality of the product batch depends on their professionalism, experience, ability to manage the process inside the roaster, even their mood, i.e. the taste of the future drink. Properly processed coffee will demonstrate all the advantages of the variety, and the negative characteristics will be veiled by the competent actions of the master.

For your information. Every year in Russia competitions are held for the best roast master “Roaster of the Year”. The competition usually has two nominations: “Best Roaster” and “Best”. World championships among industry professionals are also held.

Where is coffee roasted on an industrial scale?

As we have already found out, coffee is roasted in roasters. You can load 12 - 15, and in some models up to 60 kg of grains at the same time. Frying temperature 200 – 250°C. There are three types of slot machines:

  • drum - the most common in production;
  • convection - frying occurs in them using hot air;
  • mixed type - expensive, difficult to manage structures.

Addition. There are also roasters that roast coffee in small volumes from 50 to 300 g. Such units are of the drum or mixed type. They are needed to assess the proposed purchase of a large batch of raw materials. The roaster determines the flavor potential of the beans, and based on the assessment, the purchase decision is made.

After sorting the coffee beans, roasting them in a router and cooling, the finished product is packaged and sent to the consumer.

How to drink correctly

It is correct to drink this coffee drink without adding sugar. It is recommended to use it a quarter of an hour before a meal or 30 minutes after a meal. You should drink no more than two servings per day.

Only with moderate consumption of green coffee will there be a positive effect on the body

Myths and truth about green coffee: health or a test of the body's strength?

Want to know how to lose weight without exercising? We, too!

But today there is a fascinating story about how to make millions by selling a raw product at the price of a finished product. Make yourself comfortable.

The Incredible Green Coffee Phenomenon

The story began in 2012, when the American food company Applied Food Sciences launched a powerful marketing campaign in support of green coffee. Scientists have stated that the grain extract is an effective weight loss aid. A powerful wave of general interest arose around the shocking news - no joke, a natural remedy has finally been found that replaces the gym and diets! But it soon turned out that everything was not as simple as we would like: in 2014, the US Federal Trade Commission fined AFS for “unsubstantiated claims regarding weight loss using flawed research” (we will tell you why a little later).

However, even after the public dethronement of green coffee from the podium, its fame has not faded at all, but, on the contrary, continues to grow exponentially. Every year, more and more green coffee-based products are sold around the world: whole beans, crushed beans, extracts and blends. Demand creates supply, people are actually willing to buy raw coffee berry seeds, hoping that it will make them healthier.

What is green coffee

Is this some special variety? Not at all.

Green coffee is actually the same product that we use to make our favorite espresso and Americano, only it has not gone through the final stage of processing - that is, roasting.

But the same one, but not the same one. Green coffee, having an almost similar set of useful microelements and substances, is very different from roasted coffee in its ability to release them. In fact, it is a completely raw product that requires further processing if we want to get more benefits from it than from boiled stones.

In Russia, you can most often buy regular unroasted beans. At the same time, the price of such a product surprisingly turns out to be equivalent to the cost of expensively roasted grain and averages from 700 to 1500 rubles. per kg (you must agree, this is quite strange, considering that it takes much more effort to prepare ready-made grain).

Why?

Yes, because 10 years ago Applied Food Sciences started a new mythology in the coffee world. And myths, as we know, are very tenacious. And the further we go, the deeper they take root in our consciousness.

5 dangerous myths about green coffee

Myth No. 1: Green coffee makes you lose weight

Oh yeah, AFS were really cool in their quest to brainwash people. 100% successful. But it's time to tell why the US Federal Trade Commission fined the resourceful executives of this company $3.5 million.

Firstly

, in the experiment that marketers referred to, only 16 people took part.
Secondly
, during the experiment, all possible rules of experimental purity were violated.
Third
, the study was entirely paid for by AFS management. Fourthly, its organizers hid the fact that some participants dropped out of the “race” due to a sharp deterioration in their health while taking an experimental drug.

Further limited control studies carried out on green coffee extract showed that the only thing differentiating it from roasted coffee was the increased presence of a substance called chlorogenic acid. It improves metabolism and, as a result, can promote weight loss. However, its concentration in green coffee is not high enough to be truly effective; it is much easier to buy the same acid in a pharmacy in the form of a concentrate and not take risks with raw coffee.

Myth #2: Green coffee is healthier than black coffee

And here we come close to the story of two participants in the experiment who dropped out due to deteriorating health. Yes, as it turns out, green coffee can have some pretty serious side effects. There are three reasons for this: pesticides, fungus and bacteria. All three types of dangers await us because green coffee is not subjected to heat treatment, which completely destroys all harmful substances that can linger in the beans.

Myth #3: Green coffee beans can be made at home.

It is possible, but, as we wrote above, it will taste like boiled stone. Or hay, if the grain is crushed. Let's be clear: whole raw beans do not lend themselves to a regular coffee grinder - if you try to grind them, you will break it with a 95% chance. Unground beans can give water about the same beneficial properties as dried peas, which were poured with boiling water for 5 minutes. Trying to roast green beans yourself, unfortunately, is also doomed to failure in most cases. However, if you are going, read this article in advance.

If you bought crushed green grain (which is quite difficult to find in Russia), your chances of benefiting from it increase. The drink will be similar to a decoction of whole oats.

Myth #4: Green coffee has more antioxidants

No. Even if you buy already ground green coffee, its benefits will not exceed those found in regular, roasted beans. And there will be no more antioxidants.

During roasting, amazing processes occur with coffee beans that transform the green “pebbles” of coffee berries into that delicious product with a special aroma that we love so much.

As soon as the grains begin to darken, the Maillard reaction begins in them. The internal pressure in the beans increases enough to break their super-strong cell walls, creating a cracking sound. At this stage, melanoids, substances that change the color of the beans, begin to appear. They also help change the taste of coffee.

After the first crack, the reaction changes from endothermic (the beans absorb heat from the drum) to exothermic (the beans release heat). At this stage, the grains increase porosity, and the oils in them migrate to the cell walls.

A process called Strecker degradation then occurs: amino acids react with molecules and form new compounds such as aldehydes and ketones. It is this reaction that is necessary to create the aroma. But chlorogenic acid begins to break down, breaking down into caffeic and quinic acids, which give the grains astringency and bitterness.

The taste and chemical composition of the finished beans can vary quite a lot depending on the degree of roasting: the stronger it is, the lower the acidity and caffeine level. Beans that have undergone less heat treatment will contain more chlorogenic acid (the same that is considered the most beneficial part of green grains), but at the same time you no longer risk catching an unknown infection that raw beans can hide.

Thus, for those who want to get the maximum benefit from coffee, we recommend preparing your favorite drink from the lightest roasted beans. This could be the perfect compromise between your inner coffee drinker and your inner healthy eater.

But are there any benefits from green coffee?

Maybe. However, scientists have not yet been able to prove this for sure. For the most part, green coffee works as a placebo. And, if you don’t believe in miracles and that you can lose weight without doing anything, you’ll probably like our article about how coffee helps you achieve results in sports.
